Oh, it's you. It's been a long time, how have you been? I've been really busy being at home, you know, after the QUARENTINE? The nice thing about being stuck at home is you have a lot of spare time. And we had a lot of spare ribs! Nah I'm kidding, there are actually beef ribs! After being smoked for 3 hours and finished in the oven, I have to say, we really have nailed down how to cook the perfect rib. A lot of people will tell you that they want their meat to "fall off the bone." Those people are wrong. What you really want from a good rib is a bit of bite, not much, but enough to be satisfying. And boy did these perform! Served with a cheesy casserole (reheated) this meal is very filling and delicious the whole way through!
